Quick Recipe: Mango Mochi (Japanese dessert)
How to cook:
Add rice, sugar, milk, cornstarch, melted butter, and coconut milk into a bowl and mix well. The mixture should be extremely smooth with no lumps. Pour this into a small bowl, which can be placed inside your steamer. Now, steam te mixture for around 10 minutes till the dough becomes translucent. Take it out, cover it with a plastic wrapper and allow it to cool. Meanwhile, cut mangoes into small square cubes that are about 1/2 an inch in size. Moisten your hands with water and take the dough. Roll them into small balls and then flatten them using your hands. Place a cut mango cube in the middle of the dough. The next step is to cover the mango cube with the dough from all sides, as you would do for stuffed parathas. Coat the balls liberally with shredded coconut and place them in the refrigerator. Serve them chilled.
